Warm kale salad

This salad takes about 5 minutes to make, takes only 5 ingredients and makes you rethink everything you knew about kale! Easy, warm, delicious and, of course, very healthy! It can be an appetizer /entree or a side. The instructions below are good for 2 people, just double ingredients if you are making it for 4. Since I made it, I cannot stop and make it almost every day until I ran out of kale. Then I get more kale and keep this going. This is the best way to increase intake of your greens in enjoyable way.

Ingredients

  • Kale leaves (half of the bunch for 2 people)
  • One table spoon of olive oil
  • 1/4 of a fresh lemon
  • 1/3 of a cup of grated parmesan cheese [replace with vegan parmesan for a vegan version]
  • Pumpkin seeds (about 1/4 of a cup)

Instructions

  • Take a frying pan and put it on medium heat
  • Pour about a table spoon of olive oil when the pan is hot
  • Throw raw pumpkin seeds in the pan
  • About a minute later, take kale leaves and put them in the pan. You can cut them into small pieces or just pull kale in small pieces by hand
  • Squeeze the juice of a lemon on kale and steer it
  • Add parmesan cheese and steer it again. DO NOT let it fry for more than 3 minutes or it will get soggy
  • When done, transfer the salad to the plates immediately and serve
