Easy tomato bisque with basil

This soup takes 20 minutes to make, uses basic ingredients and it tastes so good that my husband who does not like soups, ate 2 bowls of it really fast 🙂 This soup makes a perfect dinner or lunch, really healthy and smells amazing.

Ingredients (4 servings)

  • 3 cups of water
  • Salt
  • 1 cup of a heavy (I used 18%) cream
  • a can of tomato paste
  • Parmesan cheese
  • onion (1)
  • tomato (I used one, but the more you add, the better it tastes. You can use any kind of tomatoes, I used house tomato)
  • Few leafs of fresh basil
  • Few spoons of minced garlic
  • 1 sachet of beef/chicken bouillon
  • Few slices of mozzarella cheese (optional)
  • Spices (I used dry basil, dry parsley, vegetable mix, garlic salt, paprika, freshly grounded black pepper)
  • Fresh herbs (optional, but it makes it smell amazing) – parsley, oregano

Instructions

  1. Put 3 cups of water in a small/medium pot on high
  2. When it begins boiling, add few pinches of salt
  3. Reduce the heat to low (or 3 out of 8) and add beef sachet, cream and tomato paste and stir everything well
  4. Cut onion and tomato in small pieces and put them on a frying pan, adding some oil and garlic, and put on medium
  5. Add spices to the mix of onion, tomato and garlic and stir
  6. When onion turns gold (and smells delicious), add everything from the frying pan to the pot where the soup is
  7. Stir everything, add some Parmesan cheese (optional)
  8. The soup usually takes 15 minutes to prepare, but you can tell when it is  ready by its smell
  9. When it is ready, pour soup in soup bowls, place sliced  (or shredded) mozzarella cheese on each plate, garnish with fresh herbs (basil, parsley, oregano) and add some fresh grounded black pepper
