This salad is quick to make and can work as a side during hot summer days. It includes all veggies that are in season in the summer like tomatoes, zucchini or red pepper.
This recipe can be modified to include corn, asparagus, parmesan or balsamic vinegar depending on your taste.
Time to make: 20 minutes or less
Ingridients:
- 1-2 zucchini
- 1 red bell pepper
- 100g of mushrooms
- Handful of cherry tomatoes
- 1/4 of red onion
- 4 leafs of romaine lettuce
- Handful of fresh parsley and basil (optional)
- 1-2 tea spoons of minced garlic
- Salt, pepper, olive oil
- Italian spices or oregano
Directions:
- Cut zuchini, red pepper and mushrooms in small pieces and fry on a pan in a small amount of olive oil. Add salt, pepper, garlic and italian spices
- Cut lettuce, onion and tomatoes and put in a salad bowl
- Add fried vegetables from step 1 into the bowl
- Garnish with fresh parsley and/or basil
- Enjoy!
